mini Thanksgiving !!

So a couple of years ago, my husband and I were trying to figure out what we wanted for dinner, and he said he really wanted stuffing. But was sad, because it was August. He thought stuffing was only around during November for Thanksgiving. That got us to talking about how Thanksgiving meal is always so delicious, why do we only do it once a year?

And then was born, mini Thanksgiving.

Several times a  year now we make our our mini version of a Thanksgiving meal. Lots of times we have friends over, they all bring dishes, and it’s a lot of fun. Plus, since it is a mini version, it doesn’t take all day to make.

Here’s what we just did with our latest mini Thanksgiving:

Instant Pot a young chicken: 30 minutes (see recipe here). Seriously. Buy an instant pot. Like now.

Roasted Veggies: Bonus – Emery loved it, so hopefully your kids will too!

1 sweet potato, 1 cup of butternut squash, 2 apples, half a bag of small carrots & walnuts, tossed in olive oil and seasoned with cinnamon and nutmeg. Cut up the sweet potato, squash, & apples in chunks. Coat them in a gallon bag with olive oil, 1/4 tsp of cinnamon, 1/4 tsp of nutmeg. Bake at 400 for about 40 minutes, stirring veggies halfway. Toss in the walnuts during the last 5 minutes of cook time.

Mashed Potatoes:

mashed with 1/2 cup nonfat Greek yogurt, 2 tbsp butter, splash of milk, tsp fresh minced garlic, salt & pepper to taste. Fresh chives if you got em!

Stuffing:

take it easy on yourself and buy Kraft Stove Top reduced sodium

 

Congratulations ! You just made yourself a mini Thanksgiving that was actually pretty healthy for you, and didn’t take more than an hour to make!

cookies for breakfast !?!!

Just when you think you have figured out a good routine with your baby, they change it! It’s incredibly frustrating at times but also teaches you to just go with the flow. Try something new, or go back to something else that use to work.

I find that Emery goes through these weird sleep changes. I have to walk with her and sing. I have to give her her favorite elephant blanket. I have to sit and rock with her, etc. etc. But she always comes around and things get better.

Same thing with food. Sometimes she is in love with peas and the next day all of a sudden they are disgusting to her. But, I have found some foods seem to be awesome to her all the time. One of them happens to be PB & J oatmeal cookies.

Now I stumbled across this recipe for me and my husband and it was a bonus that Emery loved it too! The recipe is super simple: 2 bananas, 2 tbsp of chunky peanut butter (be generous .. 🙂 ) and a cup of quick oats. Now for me and my husband, I put the typical grape jelly on the cookie (or get crazy and put your favorite type of jam/jelly on – almond cherry was great!) But for Emery, she loves them without the jelly which works for me, since that means no sugar for her! So I make hers plain. I store mine in the fridge. Emery loves them cold. Now, the original recipe says you can have them for breakfast, so cookies for breakfast!

Cookies for breakfast? Life is great.
